This one leans more toward Amanda’s breakfast style, but it works well for both of us. It’s high in protein, light, and easy to heat up — simple fuel without feeling heavy. She’s not as focused on tracking calories the way I am, but she likes knowing it fits within her day and gives her a good start. I like it because it keeps me on target and takes no effort in the morning.
We make a batch at the start of the week, cut it into twelve pieces, and keep it ready in the fridge. It reheats well in the microwave or air fryer, so breakfast is basically done before the day even starts.
