Mondays call for something easy. We’re all settling back into the week, so dinner needs to feel fresh and light without demanding much effort. This one fits perfectly — a simple grilled chicken salad for Amanda and me, and an easy kid-friendly version that still keeps us aligned on the same food groups.
1 Cup Salad mix - "Sweet Kale"
0.5 cup Strawberries (can sub in Blueberries)
1 Serving - Dutch Oven Artisan Bread (You can check out the recipe here↗). INGREDIENTS:
1 packet Yeast
3¼ cups Bread flour

The goal with all our dinners is to keep the same basic balance between the adults’ plates and the kids’. The dream is for them to eat exactly what we eat — but for now, we celebrate any overlap. Tonight, cucumbers make that connection, and even the chicken ties together: grilled for us, nuggets for them.
The strawberries are a small experiment for Maverick. He loves freeze-dried strawberries but turns up his nose at the real ones, so I want to keep adding them to our salads to help him make the connection. Little by little.
This meal kicks off the week without any stress — just easy prep, simple cleanup, and everyone at the table.
